For more than a decade, scientists have known that the anti-cancer effects of a tomato-rich diet may be linked to the fruit's red color, which comes from a pigment called lycopene. When nutritionists were first getting this idea out into the community, plant geneticist Majid Foolad initiated a traditional breeding scheme to create a super-red tomato. He has spent years cross-breeding, selecting, and refining a unique new crop of tomatoes.
